Green Beans, Tomato & Goat’s Cheese

This has got to be one of my fave side dishes ever! It is so delicious, you will be tempted to not share and eat the whole thing!!!

 

Ingredients:

2 large handfuls of green beans, topped & tailed

1 large handful of cherry tomatoes, halved

100g goats cheese (I used Meredith Dairy’s one in olive oil with garlic & thyme)

1/4 cup slivered almonds

 

Method:

Lightly steam green beans – make sure they’re still crunchy – for about 1 minute and then place in a bowl of cold water

Lightly toast the slivered almonds on the stove, turning constantly so they don’t burn – takes about 2 mins

Place beans on a dish, top with cherry tomatoes, slivered almonds and goat’s cheese. Drizzle olive oil over the top
